I made some air fried scotch eggs recently and learnt a couple of new tips while making them. My problem had always been that the sausage was too thick on them and the eggs came out huge.
first off boil your eggs in the air fryer. Why use another pan? All you have to do is put all your eggs in the air fryer, set it for 250F/120C and cook for 16 minutes. It seems a long time but when you remember that you have to bring the water to the boil before you put the eggs into a pan of water to boil them normally you realise it's not really that much longer and you don't have to keep checking for the water to boil.
When your eggs are boiled plunge them into cold water and wait a few minutes before peeling, this will allow you to peel them far more easily.
Dry the peeled eggs, it makes it so much easier to wrap the sausage on if the eggs are dry.
Here is the trick I learnt. Place a piece of cling film on the counter and put a ball of sausage, enough for one egg to the side of the centre of the cling film / plastic wrap. Fold the other side of the plastic wrap over the top and flatten the ball of sausage into an oval shape. Unfold the cling film. Place the egg in the middle of the oval of sausage and lift up the cling film and use it to help wrap the sausage around the egg so the egg is nested in it.
WET YOUR FINGER TIPS this will make the next part so much easier. With your wet fingers smooth the sausage around the egg, feeling for the parts that are thicker and smoothing them out until the egg is completely wrapped.
Dip your egg into flour and then beaten egg and then lastly breadcrumbs. Use your dominant hand to dip in the flour and the breadcrumbs and your other hand to dip in the egg, so much less messy.
Cook in the air fryer set to 375F/190C for 20 minutes turn half way through cooking, If they don't seem golden brown enough after 20 minutes give them a few more minutes until they are.
