To make the lemons in a sterile jar add coarse sea salt or kosher salt to cover bottom wash lemons cut the nobble bit off top and bottom bit then cut the lemon in four but do no cut all the way through you want it to open like a flower then in the middle of lemon flower you will add a teaspoon of salt then add to jar you will fill jar up pressing down the lemon s to compact them and to release the juice this is what is going to preserve your lemons I used the end of my rolling pin to do this leave a bit of space at top it should keep releasing juices if day five your lemons are not fully covered in there juices you will need to top up with more lemon juice they should be ready to use in 30 days.
