John harvested all the beetroot we grew, and I have just pressure cooked 21/2 pounds of them and peeled and sliced ready to freeze, then I roasted another three pounds of beetroot, quartered them first put them in a bowl and put oil over them then put them in the instant pot fryer basket , they went on 180 c for thirty minutes in two batches and put air fryer lid on . They were done lovely and soft roasted I shall peel off skin and freeze the roasted ones for a side dish or salads.

the roasted beetroot cost 33pence, and the pressure cooked ones cost 3 pence.
Roasted beetroot sound so good!
